1.33 Cups All-Purpose Flour0.5 Teaspoon Baking Soda0.25 Teaspoon Baking Powder1 Stick Butter1 Egg Yolk0.75 Cup Sugar1 Teaspoon Pure Vanilla Extract8 Ounces Cream Cheese2 Cups Powdered Sugar1 Pint Fresh Strawberries1 Pint Fresh BlueberriesPreheat the oven to 350 degrees. Grease a mini-muffin tin.For the crust: In a bowl, add sugar and butter and beat until smooth. Add egg yolk and 1/2 teaspoon of vanilla extract and beat until light and fluffy.In another bowl, mix together flour, baking powder and baking soda. Add flour mixture into butter mixture and mix until a little crumbly dough is formed. Make about 1 1/2-inch sized balls from the mixture. Make each ball smooth by rolling in your hands. Place 1 ball in each prepared muffin cup and with your fingers, press down slightly.Bake for about 8-10 minutes. Remove from the oven and keep aside to cool completely before removing from muffin tin.In a bowl, add cream cheese and powdered sugar and beat until smooth. Add remaining 1/2 teaspoon of vanilla extract and mix well. With a spoon, place filling mixture in each cooled tart crust. Arrange strawberries and blueberries over filling in each crust. Refrigerate before serving.
