4 Small Yellow Onions1 Tablespoon Butter1 Tablespoon Extra-Virgin Olive Oil1 Clove Garlic0.33 Cup Firmly Packed Sun Dried Tomatoes6 Large Eggs0.25 Pound Feta Cheese0.5 Teaspoon Kosher Salt & Freshly Ground Black Pepper2 Tablespoons Fresh Parsley4 Ciabatta RollsIn a large cast iron skillet, heat oil and butter over medium heat. Add onions and gently, stir to arrange in an even layer. Reduce the heat and gently caramalize the onions for about one hour, stirring every 5 to 10 minutes. Add sun-dried tomatoes and garlic and cook for another 3 minutes, stirring continuously. Spread onion mixture in an even layer in the bottom of a clean skillet. Carefully, crack eggs on top of onion mixture and sprinkle with feta cheese, salt, and black pepper. With a tight-fitting lid, cover and cook for another 10-15 minutes.Garnish with a healthy serving of chopped parsley, and pair with warm Ciabatta rolls.
