0.5 Cup Cilantro Leaves0.5 Cup Fresh Mint Leaves3 Small Serrano Chilis0.5 Teaspoon Sea Salt1 Medium Potato2.25 Cups Water4 Teaspoons Butter8 Slices Naan Bread2 Medium Tomatoes1 Medium Cucumber1 Large Onion0.5 Teaspoon Chaat Masala2 Cups Cheddar CheeseIn a small saucepan over medium-high heat, add 2 cups of water and potato slices. Bring to a boil and cook until fork tender, 15-18 minutes. Drain in a colander and set aside.Preheat panini grill.In the bowl of a food processor, add cilantro, mint, chilis & 1/4 teaspoon salt. Add water gradually while pulsing mixture. Pulse until smooth.On a flat work surface covered with a sheet of parchment paper, arrange naan in a single layer. Spread 1/4 butter on each one and turn them over. Spread 1 tablespoon of chutney on each one. In layers, place 2 slices tomato, 2 slices potato, 4 slices cucumber and 2 slices of onion. Sprinkle 1/4 teaspoon of salt and chaat masala evenly over all 4 naans. Top each with 1/4 cup of cheese.Spread 1 tablespoon of chutney on other naan and place them over the cheese. Spread each with 1/4 teaspoon of butter. Place 1 panini into the grill and toast until golden brown, 3-5 minutes. Repeat with sandwiches.Cut half and serve, with a fresh green salad or a bowl of lentil soup.
