1.5 Cups All-Purpose Flour1 Cup Whole Wheat Flour0.5 Cup Maple Sugar1 Stick Cold Unsalted Butter1 Teaspoon SaltIn a food processor, add flours, 1/4 cup of maple sugar and salt and pulse until well combined. Add butter and pulse until a coarse meal-like mixture is formed. Add 1/3 cup of water and maple syrup and pulse until a dough is formed. Transfer dough to a smooth surface and with your hands, press together. Divide the dough into 4 equal sized portions. Roll each portion into a disk. With plastic wraps, cover each dough disk and refrigerate for about 1 hour.Preheat the oven to 400 degrees. Line 2 baking sheets with parchment paper. Place 1 dough disk onto a floured surface and dust with some flour. Roll the dough into a 12-inch circle. Arrange the rolled circle onto 1 of the prepared baking sheet. Repeat with 1 more dough disk. Coat both dough circles with maple syrup and sprinkle with maple sugar.Bake for about 18 minutes or until crisp, shifting the baking sheets from top to bottom and front to back once halfway through baking. Remove from oven and transfer the crackers onto wire racks to cool completely. Repeat with the remaining 2 dough disks. Break the crackers into desired sized pieces and serve.
