Line a baking sheet with parchment paper.In a small bowl, mix together cheese and 1 spoonful of flour. Keep aside.In a bowl of a stand mixer, mix together remaining flour, baking powder, and salt. Add cold butter and with a paddle attachment, mix until it is cut into pea-size pieces. In another bowl, add an egg and buttermilk and with a fork, beat lightly. Add egg mixture into the flour mixture and with mixer, mix on low speed until moistened. Add cheese and mix until just combined. Place dough onto a well-floured surface and with your hands, knead lightly for about 6 times. Now, roll the dough into a 10x5-inch rectangle. With a sharp and floured knife, cut dough rectangle in half lengthwise and then, in quarters across to make 8 rectangles. Arrange biscuits on a prepared baking sheet in a single layer. Coat the top of each biscuit with a prepared egg (beat an egg with a tablespoon or two of water) wash. Bake for about 20-25 minutes or until the tops become golden brown.
