Smart Recipes, American Recipes, Beans,Vegetables,Other Recipes, Recipes Beans,Vegetables,Other American Smoky Garlic Soup Smoky Garlic Soup Recipe | PT1H30M Serves 4 Ingredients: 1 Tablespoon Vegetable Oil 1 Medium Onion 1 Medium Carrot 2 Cloves Garlic 2 Bay Leaves 0.5 Teaspoon Smoked Paprika 1 Large Bunch Fresh Sage Leaves 1 Cup Yellow Split Peas 4 Cups Vegetable Stock 1 Large Head Roasted Garlic 0.25 Teaspoon Liquid Smoke 1 Teaspoon Salt & Freshly Ground Black Pepper Use a colander to drain peas and rinse with cold water. Set aside. In a Dutch oven over medium-high heat, heat oil and saute onion until translucent, about 5 minutes. Add carrots, crushed garlic, bay leaves, paprika, and half the sage. Saute until veggies are tender-crisp, about 10 minutes. Stir in peas & stock and bring mixture to a boil. Reduce heat to medium-low and simmer until peas are soft, about 45-60 minutes. Remove & discard bay leaves. Squeeze insides of roasted garlic cloves into the mixture and add liquid smoke, remaining sage, salt & pepper. Carefully pour about 1/2 of the soup into a large bowl. Use an immersion blender to puree it until smooth & creamy. Pour the pureed portion back into the soup and stir well to blend. Ladle soup into bowls & serve hot.
