Ingredients:
1 Tablespoon Vegetable Oil1 Medium Onion1 Medium Carrot2 Cloves Garlic2 Bay Leaves0.5 Teaspoon Smoked Paprika1 Large Bunch Fresh Sage Leaves1 Cup Yellow Split Peas4 Cups Vegetable Stock1 Large Head Roasted Garlic0.25 Teaspoon Liquid Smoke1 Teaspoon Salt & Freshly Ground Black PepperUse a colander to drain peas and rinse with cold water. Set aside.In a Dutch oven over medium-high heat, heat oil and saute onion until translucent, about 5 minutes. Add carrots, crushed garlic, bay leaves, paprika, and half the sage. Saute until veggies are tender-crisp, about 10 minutes.Stir in peas & stock and bring mixture to a boil. Reduce heat to medium-low and simmer until peas are soft, about 45-60 minutes. Remove & discard bay leaves.Squeeze insides of roasted garlic cloves into the mixture and add liquid smoke, remaining sage, salt & pepper. Carefully pour about 1/2 of the soup into a large bowl. Use an immersion blender to puree it until smooth & creamy. Pour the pureed portion back into the soup and stir well to blend. Ladle soup into bowls & serve hot.
