0.25 Cup Extra Virgin Olive Oil0.25 Cup Sesame Seeds2 Medium Yellow Onions1 Teaspoon Ground Cumin0.5 Teaspoon Ground Turmeric0.5 Teaspoon Salt & Freshly Ground Black Pepper15 Ounces Chickpeas0.25 Cup Parsley0.5 Pound Store Bought Phyllo DoughHeat 3 tablespoons of oilive oil in a sauté pan over medium heat, sauté onions for 10 minutes, or until translucent. Add cumin, salt, pepper, turmeric, and chickpeas to the sauté pan and cook for another 10 minutes.
Roughly mash the garbanzo bean mixture using a potato masher, and stir in parsley.Preheat the oven to 375 degrees and grease a cookie sheet with olive oil or cooking spray.Cut the phyllo dough in half to form 2 stacks of dough. Remove 1 sheet of phyllo dough, and brush with a light layer of oil. Repeat with 2nd and 3rd phyllo dough sheets.
Mound 2 tablespoon of the chickpea mixture at the end of the phyllo sheets. Diagonally fold the strip of the sheet to form a triangle. Keep folding until you reach the end of the strip maintaining the triangular shape. Repeat with the remaining phyllo sheets and chickpea mixture. Place the pastry on the prepared cookie sheet and brush the top with a thin layer of oil, and sprinkle with sesame seeds.Bake for 25 minutes or until golden brown and delicous.
