After mixture has cooled, cover and refrigerate for at least an hour, or overnight. In a small bowl, pour sugar and add vanilla beans. Use a spoon to mix and break up clumps. Add salt and mix again. Arrange 6 ramekins on a work surface. Fill each one with about a cup of panna cotta . Cover each ramekin with plastic and refrigerate until set, about 4 hours. Top with blackberry ganache.
