After mixture has cooled, cover and refrigerate for at least an hour, or overnight. In a small bowl, pour sugar and add vanilla beans. Use a spoon to mix and break up clumps. Add salt and mix again. Set aside. In another small bowl, add gelatin, 1/4 cup of milk and extract. Mix with a fork until smooth and allow to set for 10 minutes. Place saucepan with milk & cream mixture over medium-high heat until steaming, but not boiling. Remove from heat and remove vanilla pod. Scrape any residue in the pod into mixture and set pod aside. Add sugar mixture and gelatin mixture into the saucepan. Whisk until blended. In a 4-Cup measuring cup, pour the mixture and allow to cool, stirring occasionally to keep blended. Arrange 6 ramekins on a work surface. Fill each one with about a cup of panna cotta . Cover each ramekin with plastic and refrigerate until set, about 4 hours. Top with blackberry ganache.
