Ingredients:
2 Cups Fresh Cilantro Leaves3 Cloves Garlic1 Jalapeño Pepper2 Cups Chicken Stock1 Tablespoon Olive Oil1 Medium Onion1 Cup Rice1 Tablespoon SaltIn a food processor, add jalapeño pepper, cilantro, garlic and 2 cups of stock and pulse until smooth. Keep side.In a large frying pan, heat oil over medium-high heat and sauté onion for about 2 minutes or until browned lightly. Stir in rice and salt and sauté for about 5 minutes or until rice is toasted. Stir in cilantro mixture and remaining chicken stock and bring to a boil. Reduce the heat to low and simmer, covered tightly for about 20 minutes.Remove from heat and keep aside, covered for at least 5 minutes. With a fork, fluff the rice and serve.
