1 Medium French Baguette0.25 Cup Olive Oil6 Cloves Roasted Garlic1 Clove Raw Garlic1 Tablespoon Butter6 Cups Button Mushrooms1 Small Bunch Fresh Thyme Leaves0.5 Cup Balsamic Vinegar0.5 Teaspoon Sea Salt0.125 Teaspoon Freshly Ground Black Pepper1 Small Lemon1 Small Bunch Fresh ParsleyPreheat oven to 400 degrees. Line a sheet pan with Sil-pat or parchment paper.Cut baguette into 12 even slices and arrange on the prepared sheet pan. Brush each slice generously with oil and bake until golden brown & crispy, about 10 minutes. Use raw garlic halves to rub on the surface of each bread slice. Set aside.In a large skillet over medium-high heat, heat butter and add mushrooms, roasted garlic, thyme & vinegar. Saute until mushrooms are lightly browned and liquid has been absorbed, about 5-7 minutes. Remove from heat and stir in lemon juice. Season with salt & pepper.Arrange toasted bruschetta on a platter. Top each slice with 1 heaping tablespoon of mushroom mixture. Garnish with parsley and serve warm.
