2 Pounds Yukon Gold Potatoes8 Slices Bacon1 Small Red Onion0.25 Cup White Vinegar2 Tablespoons Water3 Tablespoons Granulated Sugar1 Teaspoon Salt0.25 Teaspoon Freshly Ground Black Pepper1 Tablespoon Fresh Parsley Leaves In a Dutch oven over medium-high heat, add potatoes and enough salted water to cover them. Bring them to a boil and cook until the potatoes are fork-tender, about 10 minutes. Drain potatoes in a colander, and allow to cool slightly. After the potatoes are cool to the touch, slice into 1/4 inch slices.
In a cast iron skillet over medium-high heat, fry bacon until brown and crispy, about 6 minutes. Transfer bacon to a plate lined with paper towels and set aside. Reserve bacon grease in the skillet.In the same skillet over medium-high heat, add onion and saute until brown, about 5 minutes. Stir in water, sugar, salt & pepper and vinegar to the skillet. Bring the mixture to a boil and stir in the potatoes, parsley, and 4 pieces of crumbled bacon. Mix well and cook for until the potoates are heated through, about a minute. Transfer mixture to a serving dish and garnish with remaining crumbled bacon.
