0.25 Pound Thick Slices Bacon0.25 Cup All-Purpose Flour1 Teaspoon Salt & Freshly Ground Black Pepper1.5 Pounds Lean Stew Beef1 Large Onion3 Cloves Garlic3 Large Carrots1.5 Cups Guinness Stout2 Tablespoons Tomato Paste2 Teaspoons Worcestershire Sauce1 Cup Beef Stock1 Bay Leaf2 Large Russet Potatoes0.5 Teaspoon Dried Leaf Thyme1 Small Bunch Fresh ParsleyIn a large skillet over medium-high heat, sauté bacon until golden brown on both sides, about 7-10 minutes. Transfer bacon to a plate lined with paper towels to drain. Chop bacon and set aside.In a medium bowl, combine flour with 1/4 teaspoon pepper and 1/2 teaspoon of salt. Add cubed beef and stir until meat is completely coated. Shake off excess flour.In a Dutch oven over medium-high heat, add beef and onion and sear until beef is browned, about 5-8 minutes. Stir in bacon & garlic and cook for another 1 minute. Add carrots, stout, tomato paste, Worcestershire sauce, stock, and bay leaf and bring the mixture to a boil. Reduce the heat to medium-low and simmer until beef is tender, about 2 hours.Increase heat to medium-high, stir in potatoes & thyme, and cook until potatoes are tender, about 30 minutes.Add remaining salt, pepper, and parsley and cook for another 5 minutes.
