20 Pound Turkey5 Pounds Ice1.5 Cups Fresh Chicken Stock2 Tablespoons Kosher Salt2 Tablespoons Garlic2 Tablespoons Dried Tarragon2 Tablespoons Dried Thyme2 Tablespoons Dried Marjoram2 Tablespoons Dried Savory2 Tablespoons Dried Onion2 Tablespoons Basil2 Tablespoons Rosemary1 Tablespoons Coriander Seeds1 Tablespoons Dried Oregano1 Tablespoons Freshly Cracked Black PepperIn a bucket, add 1 gallon cold water. Add salt and stir until salt dissolves completely. Add onion, garlic, herbs and spices and stir to combine well. Add 2 cups of ice in bucket.Add turkey into brine mixture and cover with more ice. Close the bucket tightly and swish 2-3 times. Refrigerate the bucket for up to 24 hours.Preheat the oven to 350 degrees. Arrange a wire rack in a large roasting pan.Remove turkey from brine mixture and discard the liquid. With paper towels, pat-dry the turkey completely. Arrange turkey on the rack in the roasting pan. Bake for about 5-6 hours. Remove turkey from oven and transfer onto a cutting board. With a piece of foil, cover the turkey for about 10 minutes, to absorb more and more juices. Cut into desired slices and serve.
