1 Tablespoon Extra-Virgin Olive Oil1 Medium Onion1 Small Jalapeno1 Clove Garlic1 Pound Homemade Chorizo1 Cup Tomato Sauce10 Ounces Diced Tomatoes With Green Chilies2 Cups Frozen Corn1 Teaspoon Robust Chili Powder1 Teaspoon Cumin0.5 Teaspoon Paprika0.25 Teaspoon Cayenne Pepper1 Teaspoon Salt & Freshly Ground Black PepperIn a cast iron skillet, heat the olive oil over medium heat, stir in the onions, jalapeno and minced garlic until the onions are translucent. Add the chorizo and saute for about 10 minutes or until the chorizo is browned. Drain any excess grease. In the crock of a slow cooker, combine the chorizo mixture, tomato sauce, diced tomatoes, corn, and spices. Cook on low for 8 hours, or on high for 4 hours.Serve with cornbread, and your favorite garnish if desired.
