In this lovely salad, we combine asparagus, cherry tomatoes, red onion slices, and bell pepper slices in a little olive oil. After they grill to a tender yet crisp perfection, they are drizzled with a homemade balsamic vinaigrette.

This dish is easy to make and looks especially pretty on your picnic table. Cottage cheese has a naturally cool, briny taste. When you mix it with diced radishes, heirloom tomatoes, cucumbers, and a refreshing sprig of dill, you get a gorgeous rainbow salad that is also healthy for you.
