0.5 Pound Dark Chocolate Chunks1 Cup Whole Milk2 Cups Heavy Whipping Cream0.33 Cup Unsweetened Cocoa Powder6 Large Egg Yolks0.5 Cup SugarBring water to a simmer in a saucepan and place a bowl filled with chocolate. Stir the chocolate until smooth and melted. Set aside.Whisk cocoa powder with the milk & heavy cream in a saucepan and simmer over medium heat until it boils. Remove from heat. Slowly temper the egg mixture with a small amount of the hot milk, to avoid scrambling the eggs. Combine the egg and remaining milk mixtures in the saucepan and stir in melted chocolate, mix well to combine.Simmer for 5 minutes on low heat, stirring constantly. Transfer custard to an ice bath, and stir until completely cooled. Chill in the refrigerator for at least 4 hours.Churn the custard in an ice cream machine per the manufactures instructions, and freeze until solid.
