8 Ounces Soba Noodles8 Cups Cold Water2 Teaspoons Sea Salt24 Ounces Packaged Broccoli Cole Slaw2 Medium Carrots0.25 Cup Extra-Virgin Olive Oil0.25 Cup Rice Vinegar3 Tablespoons Honey3 Tablespoons Crunchy Peanut Butter2 Tablespoons Soy Sauce1 Tablespoon Sriracha Pepper Sauce1 Tablespoon Fresh Ginger4 Cloves Garlic1.5 Cups Roasted Unsalted Peanuts1 Small Fresh Bunch CilantroIn a medium stockpot over medium-high heat, add water & salt and bring to a boil. Stir in noodles and cook until al dente, about 5-7 minutes. Use a colander to strain noodles and rinse well with cold water.Meanwhile, in a medium bowl, add oil, vinegar, honey, peanut butter, soy sauce, Sriracha, ginger & garlic and whisk until totally blended. Set aside.Transfer noodles into a large mixing bowl and stir in broccoli slaw & carrots until well blended. Pour prepared sauce over noodle mixture and gently toss to combine. Add peanuts & cilantro and toss again. Garnish with remaining peanuts and serve immediately with a side of Sriracha sauce. You may also cover the salad and refrigerate until ready to serve.
