Stir in the rice and reduce heat to low. Cover and simmer until water is evaporated and rice is tender, about 18-20 minutes. Set aside. In a large skillet or wok over medium-high heat, heat 1 tablespoon oil and add diced chicken, diced onion, diced pepper. 1 tablespoon soy sauce and garlic.
