1 Green Bell Pepper1 Bay Leaf2 Carrots3 Cloves Garlic1 Onion3 Pounds Skinless Chicken Thighs0.33 Cup Brown Rice16 Ounces Tomato Sauce1 Teaspoon Pepper1 Teaspoon Chili Powder1 Tablespoon Garlic Powder1 Tablespoon Cider Vinegar2 Tablespoons Olive OilIn a large soup pan, heat oil and sauté green pepper, onion, carrots and garlic for about 4-5 minutes. Add remaining ingredients & 6 cups water and cook for about 1 hour. With a slotted spoon, transfer chicken to a bowl, remove bones and with two forks, tear into bite sized pieces. Return chicken meat to soup pot and simmer for 5 more minutes.
