Gently, roll each ball between the palms of your hands to make a smooth shape. In a hot water bath, melt remaining milk chocolate chips. Remove from heat and keep aside to cool to lukewarm. With a chocolate dipping fork, coat each truffle with melted chocolate evenly, dripping off excess. Garnish truffles with candied ginger and arrange onto a wire rack to set completely before serving.
