Add mascarpone and beat until just combined. In another bowl in stand mixer, beat egg whites until they are fluffy and form stiff peaks. Fold egg whites into mascarpone mixture. In another small bowl, stir in espresso and liqueur until blended. Dip 12 cookies one at a time in espresso mixture. In the bottom of an 8 X 8 casserole dish, layer cookies.
