4 Cups Water2 Cups Fresh Green Beans1 Tablespoon Extra-Virgin Olive Oil2 Teaspoons Thai Curry Paste2 Large Boneless & Skinless Chicken Breasts0.5 Teaspoon Salt & Freshly Ground Black Pepper1 Cup Coconut MilkHeat a large cast-iron skillet over medium-high heat, add water and green beans. Bring to a boil and simmer, covered, for 5 minutes. Drain and rinse the green beans in a colander. In the same cast-iron skillet, heat the olive oil and saute the curry paste. Stir in the diced chicken, salt & black pepper, and saute the chicken until completely browned. Stir in the green beans and coconut milk and simmer for another 5 minutes.Serve with steamed rice.
