Line a sheet pan with a Silpat or parchment paper. On a lightly floured work surface, roll pastry into a rectangle approximately 8 x 14 inches. Transfer pastry to the prepared sheet pan. Score edges around pastry to make a border about 1/2- inch wide without cutting through the pastry completely. In a small bowl, beat egg and brush it inside of the pastry’s borders. In a large bowl, add apples and toss with lemon juice. Add butter, cinnamon, brown sugar, salt and mix well to coat apples. Arrange apples evenly on puff pastry, making sure to keep them inside scored border. Bake until pastry is golden brown and apples are tender, about 30-35 minutes.
