2 Tablespoons Olive Oil1 Large Red Bell Pepper1 Medium Onion1 Pound Boneless, Skinless Chicken Thighs0.25 Cup Your Favorite Jarred Salsa15 Ounces Black Beans1.5 Cups Frozen Corn15 Ounces Diced Tomatoes2 Large Green Chilis1 Tablespoon Homemade Taco Seasoning1 Teaspoon Chili Powder1 Cup Quinoa2 Cups Chicken Stock0.5 Cup Queso Fresco Cheese1 Teaspoon Kosher Salt0.5 Teaspoon Freshly Ground Black Pepper1 Small Bunch Fresh Cilantro0.5 Small Bunch Of Green Onions1 Medium AvocadoIn a large skillet over medium-high heat, heat oil and saute onion and bell pepper until tender & fragrant, about 5 minutes. Push veggies to one side of the skillet.Season chicken with salt & pepper and saute until brown about 6 minutes. Stir in the salsa, black beans, corn, diced tomatoes, chilies, quinoa, taco seasoning and chili powder. Stir well and bring to a boil, and reduce to a simmer, cover and simmer for 20 minutes.Gently stir to combine all the ingredients, and to slightly fluff the quinoa. Garnish with queso fresco, sliced avocado, green onions and a sprinkle of cilantro.
