Smart Recipes, Mexican Recipes, Beans,Chicken,Vegetables,Grains Recipes, Recipes Beans,Chicken,Vegetables,Grains Mexican Mexican-Style Quinoa Skillet Mexican-Style Quinoa Skillet Recipe | PT40M Serves 6 Ingredients: 2 Tablespoons Olive Oil 1 Large Red Bell Pepper 1 Medium Onion 1 Pound Boneless, Skinless Chicken Thighs 0.25 Cup Your Favorite Jarred Salsa 15 Ounces Black Beans 1.5 Cups Frozen Corn 15 Ounces Diced Tomatoes 2 Large Green Chilis 1 Tablespoon Homemade Taco Seasoning 1 Teaspoon Chili Powder 1 Cup Quinoa 2 Cups Chicken Stock 0.5 Cup Queso Fresco Cheese 1 Teaspoon Kosher Salt 0.5 Teaspoon Freshly Ground Black Pepper 1 Small Bunch Fresh Cilantro 0.5 Small Bunch Of Green Onions 1 Medium Avocado In a large skillet over medium-high heat, heat oil and saute onion and bell pepper until tender & fragrant, about 5 minutes. Push veggies to one side of the skillet. Season chicken with salt & pepper and saute until brown about 6 minutes.
