In a large bowl, add soy sauce, 1 tablespoon of rice wine vinegar, brown sugar, garlic powder and cayenne pepper and mix until well combined. Add chicken and coat with the mixture generously. Cut the chicken cutlets into slices. Coat 2 sushi rice buns with katsu sauce and top with chicken slices, followed by some katsu sauce, omelet, mayonnaise. Top with remaining sushi rice buns and serve.
