Beluga Lentils With Roasted Vegetables Recipe | RecipeSavants.com PT40M Serves 4 Ingredients: 2 Cups Beluga Lentils 1 Large Sweet Potato 2 Cups Cauliflower Florets 1 Clove Garlic 1 Teaspoon Fresh Thyme 1 Small Bay Leaf 0.25 Teaspoon Coriander 0.25 Teaspoon Ginger 0.25 Teaspoon Cumin 0.25 Cups Golden Raisins 0.25 Teaspoon Salt & Freshly Ground Black Pepper 3 Tablespoons Olive Oil 1 Cup Greek Yogurt 1 Large Lemon 3 Cups Water Combine salt, garlic, thyme, coriander, cumin, bay leaf, ginger, lentils, and water in a large saucepan. Bring to a boil, and reduce to medium heat and cook until tender about 20 minutes. Drain lentils and spread on a cookie sheet. Meanwhile, preheat the oven to 425 degrees. Toss together cauliflower with sweet potatoes, salt, pepper and 2 tablespoons olive oil in a large bowl. Spread the vegetables on a cookie sheet and roast for 20-25 minutes. Heat a large sauté pan over medium heat with 1 tablespoon of olive oil, add the lentils, raisins and roasted vegetables and sauté for 5 minutes. Divide the mixture into serving bowls and top each with a dollop of yogurt and a squeeze lemon juice.
