8 Boneless & Skinless Chicken Breast1 Cup Matzo Cake Meal1.5 Cups Matzo Meal1.5 Teaspoon White Pepper1 Teaspoon Garlic Powder3 Eggs1 Cup White Wine2 Cups Apricot Preserves0.25 Cup Olive OilPreheat the oven to 375 degrees. Grease a 9X12 inch casserole dish with 3 tablespoons of olive oil and set aside.Mix apricot preserves with wine in a bowl and set aside.Set three medium bowls. Add eggs in one bowl and lightly whisk. Mix matzo cake meal and matzo meal in the second one. Combine white pepper with garlic powder in the 3rd bowl.Lightly pound the chicken breasts, and then dredge each chicken breast into the eggs, then matzo mixture and finally in the spice mixture.Arrange the chicken into the prepared casserole dish and bake for 15 minutes, flip each chicken breast and lightly baste with olive oil and bake for another 15 minutes. Coat apricot mixture over the chicken and bake for another 15 minutes.
