8 Boneless Pork Chops1 Teaspoon Salt0.5 Teaspoon Freshly Ground Black Pepper1 Tablespoon Extra-Virgin Olive Oil2 Tablespoons Butter1 Medium Leek1 Medium Fennel Bulb1 Large Granny Smith Apple1 Small Bunch Fresh Sage Leaves1 Cup Hard Apple CiderAllow the pork chops to sit out for 15 minutes to come to room temperature. Season Pork Chops with 1/2 teaspoon salt & 1/4 teaspoon pepper on both sides.In a large cast-iron skillet over high heat, heat the oil and sear meat until golden brown, about 2 minutes on each side. Transfer to a plate and tent with aluminum foil.Reduce the heat to medium-high heat, heat butter and saute the leeks, fennel & apples for about 10 minutes. Season with the sage, salt & pepper and saute for another minute. Transfer to a platter and cover with foil.Stir in the cider and deglaze the skillet, bring to a boil and simmer for 8 minutes.Arrange the chops on top of the fennel & apple mixture and drizzle with cider sauce.
