2 Ounce Unsalted Butter3 Tablespoons Onion1 Clove Garlic0.5 Cup Milk2 Large Eggs0.25 Cup Red Bell Pepper1 Jalapeño Pepper0.25 Cup Frozen Corn1 Tablespoon Fresh Cilantro Leaves0.75 Cup Blue Cornmeal0.5 Cup All-Purpose Flour1.5 Teaspoons Baking Powder0.25 Teaspoon Baking Soda0.5 Teaspoon Salt1 Tablespoon Granulated Sugar0.5 Teaspoon Xanthan GumPreheat the oven to 400 degrees. Arrange a rack in the middle of oven. Grease a 6 cups muffin pan with non-stick vegetable spray.In a small pan, melt butter and sauté onions and garlic until tender.In a small bowl, add eggs and milk and beat until well combined. Add onion mixture and stir to combine. In another bowl, mix together flour, cornmeal, baking powder, baking soda, sugar, xanthan gum and salt. Add onion mixture and stir to combine. Gently, fold in corn, bell pepper, jalapeño and cilantro.Divide mixture into prepared muffin cups evenly. bake for about 20 minutes.
