2 Tablespoons Extra-Virgin Olive Oil4 Pounds Chuck Roast0.5 Teaspoon Salt & Freshly Ground Black Pepper1 Package Dry Onion Soup Mix0.5 Cup Water6 Small Yukon Gold Potatoes3 Medium Carrots0.5 Medium Bunch Of Rosemary0.75 Cup Homemade Condensed SoupHeat the oil in a large cast-iron skillet over medium heat, meanwhile season the roast with a generous sprinkle of salt and pepper. Sear the roast, about 5 minutes per side. Allow to rest for 5 minutes, and set aside.Turn the heat to medium-low, and stir in dry onion soup and the water, and deglaze any brown bits off the bottom of the skillet. Line the slow cooker, with potatoes and carrots, and nestle the roast on top of the vegetables, and pour the soup mixture on top. Cover and cook on low for 8 hours, or until the roast is fall-apart tender. Garnish with the minced rosemary.
