0.25 Cup Fresh Parsley3 Large Tomatoes0.75 Cup Vegetable Oil1 Cup Self-Rising Corn Meal0.75 Cup Self-Rising Flour2 Large Eggs1 Cup Sour Cream15 Ounces Cream-Style Corn1 Large Green Bell Pepper2 Cups Sweet Corn Kernels15 Ounces Kidney Beans1 Medium Onion6 Slices Bacon1 Cup Green Onion Ranch Dip0.25 Teaspoon Ground Red PepperPreheat oven to 375 degrees. In a cast iron skillet, pour 1/4 cup of vegetable oil and grease the skillet well. Place the skillet in the oven to preheat.In a large bowl, add 1/2 cup oil, corn meal, flour, eggs, cream-style corn, sour cream, and 1 cup of cheese. Stir to combine until just combined.In the preheated skillet, pour the batter and bake until golden brown, about 30 minutes. Allow to cool to room temperature, and cube into bite sized pieces.Meanwhile, fry the bacon until crispy and transfer to a paper towel lined plate to drain and set aside.In a large glass bowl, layer the cornbread cubes, and top with the beans, corn, diced onions, and peppers.
