1 Cup Water0.5 Cup Brown Sugar1 Cup Thinly Sliced Lemongrass2 Medium Star Anise1 Large Cinnamon Stick2 Teaspoons Coriander Seeds2 Teaspoons Red Pepper Flakes0.25 Cup Soy Sauce2 Tablespoons Fish Sauce2 Tablespoons White Vinegar1 Pound Pork Tenderloin1 Large Bunch Scallions8 Large BBQ Skewers1 Cup Fried Garlic Peanut SauceCombine all the ingredients in a saucepan except for pork belly cubes and BBQ Skewers and bring to a boil, stirring frequently. Chill the marinade mixture in the refrigerator or in an ice bath until completely cooled. In a large resealable plastic bag, combine pork cubes, green onions, and cooled marinade. Shake to combine, and ensure that the pork is completely coated in the marinade. Chill in the refrigerator for at least 4 hours, if not overnight. Thread the 3 pork belly cubes on each of the BBQ skewers. Preheat the grill to low on both sides and lightly grease the grilling grate to prevent sticking.Place the skewers on the grill, and cook for 3 minutes per side. Allow the kabbob to rest for a few minutes before serving. Serve with white rice and a pasta salad if desired.
