In a 9-inch pie pan, arrange frozen crust and trim the sides. With a fork, crimp crust edges and fill with dry beans or pie weights. Bake until golden brown, about 12-15 minutes. In a medium mixing bowl, with a hand-held mixer, beat cream cheese, sugar and vanilla together until smooth. In a stand mixer on medium speed, add whipped cream and gradually increase speed to high. Beat until soft peaks form, about 3-5 minutes. With a spatula, gently fold whipped cream into cream cheese mixture. Pour mixture into the cooled pie shell and smooth with the spatula. In the bowl of a food processor, add 1 cup strawberries and puree until smooth. In a medium saucepan over medium-high heat, add sugar, cornstarch, puree and water. Stir constantly until the mixture comes to a boil and thickens, about 15-20 minutes. Let the mixture boil for 1 minute and remove from heat. Stir in the vanilla and allow mixture to cool for at least 10 minutes. Meanwhile, layer sliced strawberries on top of the pie. Drizzle the cooled glaze over the strawberries and refrigerate for at least 4 hours.
