Berry Nice GoosePT2H15M Serves 6 Ingredients: 0.25 Cup Vegetable Oil 1 Medium Goose 3 Medium Carrots 3 Medium Celery 1 Onion 0.75 Cup Blackberry Jelly 0.25 Cup Brandy Preheat the oven to 325 degrees. Lightly, grease a roasting pan with vegetable oil. With a fork, pierce the skin of goose. In a bowl, add jelly and brandy and mix until well combined. Keep aside. In the bottom of a prepared roasting pan, arrange celery, carrots and onion slices. Arrange goose over vegetables. Roast for about 20 - 25 minutes per pound, coating with jelly mixture every hour. Remove from oven and place goose onto a cutting board to roast for about 20-30 minutes before carving.
