Add rice and cook until rice browns, stirring occasionally. Stir in onion and cook for about 3 minutes, stirring frequently. Stir in garlic and cook for about 1 minute. In another pan, add stock, tomato paste, oregano and salt and bring to a boil. Add browned rice and bring to a gentle boil. Reduce the heat to low and simmer, covered for about 15-25 minutes. Remove from heat and keep aside, covered for about 5 minutes. With a fork, fluff the rice and serve.
