In a large pan, combine sugar, corn syrups and 2 cups of cold water over medium-high heat and cook until sugar is dissolved, stirring continuously. Increase heat to high, and bring to a boil. Make sure not to stir. Cook for 38-40 minutes or until a candy thermometer registers 260 degrees. Reduce heat to medium-low and stir in peanuts and butter. Cook for 15 minutes or until thermometer registers 295 degrees, stirring continuously. Add vanilla extract and baking soda and stir vigorously until mixture becomes foamy. Remove from heat and immediately, place brittle onto prepared baking sheets evenly. With the back of a spatula, smooth the surface. Keep aside to cool completely. Break into smaller chunks and serve.
