0.5 Pound Catfish Fillets0.5 Pound Prawns2 Teaspoons Ground Turmeric2 Tablespoons Fish Sauce5 Shallots5 Cloves Garlic3 Red Thai Chilies2 Teaspoons Fresh Ginger3 Tablespoons Vegetable Oil0.5 Teaspoon Paprika6.5 Cups Fresh Tomatoes0.5 Cup Vegetable Stock0.25 Cup Fresh Cilantro Leaves1 Large LimeMix fish sauce with water and turmeric in a bowl. Add fish and prawns to the mixture and stir to combine well, allow to marinate for 20-30 minutes. Combine shallots, chilies, ginger & garlic in the bowl of a food processor and pulse to form a smooth paste. Heat oil in a saute pan and cook the paste for three minutes, or until very fragrant. Stir in paprika and cook another minute. Add tomatoes to the sauce and simmer for another 10 minutes.Stir in stock, and bring to a boil. Add the fish to the sauce mixture, and cook covered for 5 minutes, in the last few minutes of cooking add prawns and continue to cook covered for another 2 minutes. Garnish with a squueze of lime juice and healthy sprinkle of cilantro leaves.
