4 Skinless & Boneless Chicken Breast Halves0.25 Cup Fresh Parsley0.25 Teaspoon Salt & Freshly Ground Black Pepper2 Tablespoons All-Purpose Flour2 Tablespoons Olive Oil1 Cup Mushrooms0.5 Cup Marsala Wine0.5 Cup Low-Sodium Chicken Stock1 Small Red OnionPound each chicken breast wrapped in a plastic wrap using a meat mallet. Season with salt and pepper. Dredge with flour and shake off excess. Heat 1 tablespoon olive oil in a large skillet and shallow-fry the chicken for 3 minutes per side. Transfer to a plate to rest for a few minutes.Sauté mushrooms and diced onions, with 1 tablespoon of olive oil in the same skillet for sauté for 5 minutes. Add stock and wine, cook for 5 minutes. Return chicken to the mushroom mixture and simmer for another 5 minutes.Garnish with parsley and serve.
