Season with salt and pepper. Dredge with flour and shake off excess. Heat 1 tablespoon olive oil in a large skillet and shallow-fry the chicken for 3 minutes per side. Transfer to a plate to rest for a few minutes. Sauté mushrooms and diced onions, with 1 tablespoon of olive oil in the same skillet for sauté for 5 minutes. Add stock and wine, cook for 5 minutes. Return chicken to the mushroom mixture and simmer for another 5 minutes. Garnish with parsley and serve.
