4 Wonton Wrappers1 Pound Ground Chicken5 Shiitake Mushrooms3 Cloves Garlic1 Thumb-Size Piece Galangal Or Ginger3 Spring Onions3 Tablespoons Fish Sauce0.25 Cup Plus 2 Tablespoons Soy Sauce0.5 Teaspoon Ground White Pepper1 Egg0.25 Cup Flour1 Teaspoon Dark Soy Sauce1 Teaspoon Sesame Oil2 Teaspoons Sugar1 Lime0.5 Teaspoon Cayenne PepperIn a large bowl, add meat, egg, mushrooms, spring onions, garlic, galangal, 2 tablespoons of fish sauce, 2 tablespoons of soy sauce and white pepper and mix until well combined.Arrange a number of wonton wrappers on a clean, smooth surface. Place a little bit of filling in the center of each wrapper. With your fingers, moisten the outside of the wrapper slightly. Turn the sides of wrapper over filling and press together to seal the filling. Then, pinch the sides to create a decorative edge. Arrange dumplings onto a large plate and dust with a little flour.In a pan of boiling water, arrange a steamer basket over high heat. Line steamer basket with banana leaf. Arrange the dumplings in the prepared steamer basket and steam for about 15-20 minutes.Meanwhile, for dipping sauce: In a bowl, add 1/4 cup of soy sauce, dark soy sauce, sesame oil, 1 tablespoon of fish sauce, sugar, lime juice and cayenne pepper and mix well. Remove dumplings from steamer and serve immediately alongside dipping sauce.
