Pasta Fagioli is one of my favourite Italian dishes. It features tasty pantry staples like pasta, white beans, diced veggies, and plenty of Italian-style herbs & spices. The recipe is quick & easy to prepare and could be served as an appetizer or a simple main course. Smart Recipes, European Recipes, Beans,Vegetables,Grains Recipes, Pasta Fagioli 2 Recipe | Recipes Beans,Vegetables,Grains European Pasta Fagioli Pasta Fagioli Recipe | PT45M Serves 4 Ingredients: 1.5 Tablespoon Extra-Virgin Olive Oil 1 Small Yellow Onion 1 Medium Carrot 1 Medium Stalk Of Celery 2 Cloves Garlic 1 Bay Leaf 30 Ounces Italian Style Diced Tomatoes 1.5 Cups Vegetable Stock 1 Cup White Beans 1 Small Piece Of Parmesan Rind 1 Teaspoon Dried Thyme 1 Teaspoon Dried Basil 0.5 Teaspoon Dried Rosemary 0.125 Teaspoon Crushed Red Pepper 1 Teaspoon Salt & Ground Black Pepper 0.5 Cup Your Favorite Dried Pasta 0.25 Cup Flat-Leaf Parsley Leaves 0.25 Cup Parmesan Cheese In a Dutch oven over medium-high heat, heat the olive oil and saute the onion, carrot, celery for about 5 minutes, or until just softened. Stir in the garlic and bay leaf and saute for another 2 minutes. Add the diced tomatoes, vegetable stock, beans, parmesan rind, thyme, basil, rosemary, and crushed red pepper to the Dutch oven. Season with salt and black pepper. Bring to a boil, and redudce to a simmer for 15 minutes. Stir in the pasta, and simmer for about 10-12 minutes, or until the pasta is al dente. Discard the bay leaf and Parmesan cheese rind. Garnish with parsley leaves and a sprinkle of grated Parmesan cheese.
