1.5 Pounds Flank Steak4 Tablespoons Olive Oil1 Medium Onion2 Cloves Garlic0.5 Cup Brandy Or Cognac4 Ounces Tomato Paste1 Tablespoon Good Quality Beef Base2 Tablespoons Brown Sugar0.25 Cup Ketchup6 Ounces White Mushrooms2 Tablespoons Fresh Rosemary4 Ounces Sour CreamIn a large pan, heat 2 tablespoons of oil over high heat and sear steak cubes for about 1 minute. Stir in garlic and onion and cook for about 3 minutes. Stir in 1/4 cup of cognac and cook until absorbed. Reduce heat to medium. Stir in tomato paste, ketchup, beef base, brown sugar and 1 cup water and cook for about 8-10 minutes, stirring occasionally.Meanwhile, in a medium skillet, heat remaining oil over high heat and cook mushrooms and rosemary for about 2 minutes, stirring occasionally. Add remaining cognac and cook for about 1 more minute, scraping the brown bits. Transfer mushroom mixture to steak mixture with sour cream and gently, stir to combine. Remove from heat and serve immediately.
