Brazilian Beef StroganoffPT35M Serves 6 Ingredients: 1.5 Pounds Flank Steak 4 Tablespoons Olive Oil 1 Medium Onion 2 Cloves Garlic 0.5 Cup Brandy Or Cognac 4 Ounces Tomato Paste 1 Tablespoon Good Quality Beef Base 2 Tablespoons Brown Sugar 0.25 Cup Ketchup 6 Ounces White Mushrooms 2 Tablespoons Fresh Rosemary 4 Ounces Sour Cream In a large pan, heat 2 tablespoons of oil over high heat and sear steak cubes for about 1 minute. Stir in garlic and onion and cook for about 3 minutes. Stir in 1/4 cup of cognac and cook until absorbed. Reduce heat to medium. Stir in tomato paste, ketchup, beef base, brown sugar and 1 cup water and cook for about 8-10 minutes, stirring occasionally. Meanwhile, in a medium skillet, heat remaining oil over high heat and cook mushrooms and rosemary for about 2 minutes, stirring occasionally. Add remaining cognac and cook for about 1 more minute, scraping the brown bits. Transfer mushroom mixture to steak mixture with sour cream and gently, stir to combine. Remove from heat and serve immediately.
