0.25 Pound Bacon1 Large Red Onion3 Cloves Garlic1 Teaspoon Salt & Freshly Ground Black Pepper2 Cups Fresh Corn Kernels1 Pound Fresh Lima Beans3 Large TomatoesIn a large cast-iron skillet over medium-high heat, fry the bacon until the fat is rendered about 8 minutes, and set aside on a plate lined with paper towels.In the same skillet with bacon drippings, saute the onion until translucent, about 5 minutes. Stir in the minced garlic, corn, lima beans, tomatoes and reserved bacon. Reduce the heat to medium-low. Cook for 20 minutes, stirring occasionally. Season with salt & pepper.
