Add lentils and stir to combine. Reduce heat to low and simmer for about 25-30 minutes. Meanwhile, for dressing: In a large bowl, add oil, vinegar, lemon juice, mustard, parsley, salt and black pepper and beat until well combined. Add apple slices and toss to coat well.
