Ingredients:
1 Cup Dry Black Lentils1 Apple2 Tablespoons Red Wine Vinegar1 Tablespoon Lemon Juice2 Tablespoons Olive Oil0.5 Teaspoon Dijon Mustard0.125 Teaspoon Salt & Ground Black Pepper2 Cups Watercress0.25 Cup Pine Nuts2 Tablespoons Fresh Parsley6.5 Cups Vegetable StockIn a large pan, add vegetable stock and bring to a boil. Add lentils and stir to combine. Reduce heat to low and simmer for about 25-30 minutes.Meanwhile, for dressing: In a large bowl, add oil, vinegar, lemon juice, mustard, parsley, salt and black pepper and beat until well combined. Add apple slices and toss to coat well.Heat a dry frying pan and toast the pine nuts for a few minutes or until lightly golden. Remove from heat and keep aside.Drain the lentils completely and keep aside to cool slightly. Add lentils into the bowl of apple mixture and toss to coat well. Top with watercress and pine nuts and serve.
