3 Tablespoons Peach Preserves2 Tablespoons Dijon Mustard2 Teaspoons Homemade Curry Powder (Recipe Associated)1 Small Bunch Fresh Thyme (Chopped)1 Teaspoon Honey1 Tablespoon Vegetable Oil4 Medium Boneless Pork Chops0.75 Small Bunch Of Green Onions (Chopped)2 Medium Peaches (Sliced)2 Tablespoons Fresh Cilantro (Chopped)In a medium mixing bowl, mix the peach preserves, Dijon mustard, curry powder, thyme, and honey.In a large cast-iron skillet over medium-high heat, heat the oil and add the pork chops. Cook for 4 minutes on each side, until cooked through completely.In the same skillet, add green onions and saute until tender, about 1 minute. Add peaches to the skillet and continue cooking for another 5 minutes. Arrange the pork chops on a bed of rice and spoon peach mixture over them. Garnish with cilantro.
