0.5 Cup Desiccated Coconut0.5 Cup Mango Jam0.75 Cup Glutinous Rice Flour4 Tablespoons Potato Starch3 Tablespoons Coconut Powder0.5 Cup Confectioners Sugar1.5 Tablespoons Sunflower Seed OilIn a large bowl, add glutinous rice flour, potato starch, sugar and coconut powder and mix until well combined. Add oil and 1 cup of water and mix until well combined.Place bowl in a steamer. Bring the water to a boil and steam for about 15 minutes, stirring twice. Remove from steamer and keep aside to cool completely. Refrigerate for about 30 minutes.Slightly wet your hands and take some amount of rice mixture, fill with the mango and then shape the mixture into a nice ball, sure to keep the filling inside. Repeat with the remaining mixture and filling. In a shallow bowl, place desiccated coconut. Coat each ball with coconut evenly and arrange into a cupcake paper cup. Refrigerator for 2 hours before serving.
