4 Cups Dry Black Beans1 Tablespoon Cooking Oil1 Cup Onion2 Cloves Garlic1 Cup Green Chiles1.5 Tablespoons Chili Powder1 Teaspoon Ground Cumin6 Ounces Tomato Paste0.25 Cup Chicken Broth1 Tablespoon Cider Vinegar0 To Taste SaltIn a large pan, add beans and enough water to cover and bring to a boil. Reduce heat to medium-low and simmer for about 1 hour.In a skillet, heat oil over medium heat and cook onion and garlic for about 10 minutes. Add cooked beans, green chiles, cumin and chili powder and cook for about 5 minutes.Remove from heat and keep aside to cool slightly. In a food processor, add beans mixture and pulse until smooth. Add tomato paste, chicken broth, vinegar, and salt and pulse until desired consistency is reached. Return beans to pan and cook about 5 minutes more before serving.
