Smart Recipes, American Recipes, Chicken Recipes, Recipes Chicken American Chicken Pot Pie PT2H15M Serves 4 Ingredients: 6 Chicken Breasts 3 Tablespoons Extra-Virgin Olive Oil 1 Teaspoon Salt & Freshly Ground Black Pepper 5 Cups Chicken Stock 1 Teaspoon Chicken Base 0.75 Cups Unsalted Butter 2 Cups Yellow Onions 0.75 Cup All-Purpose Flour 0.25 Cup Heavy Cream 2 Cups Carrots 10 Ounces Frozen Peas 1.5 Cups Frozen Small Whole Onions 0.5 Cup Fresh Parsley Leaves 1 Prepared Pastry Dough 1 Large Egg Yolk Preheat oven to 350 degrees. Coat chicken breasts in olive oil and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Arrange chicken breasts onto a baking sheet and roast for 35-40 minutes.Allow the chicken to cool slightly and dice into bite sized pieces. Raise oven temperature to 375 degrees. Meanwhile, in a small saucepan, heat stock over medium heat. Add bouillon cubes and stir until they dissolve completely. In a large Dutch oven, melt butter over medium-low heat and sauté yellow onions for 10-15 minutes and then reduce heat to low. Stir in the carrots, peas, frozen onions, and sauté for another 5 minutes. Add flour and cook for 2 minutes, stirring continuously. Slowly stir in the hot chicken stock, while stirring continuously, season with the remaining salt & pepper, and gently fold in the diced chicken and parsley. Set aside. Divide chicken filling between 4 ovenproof bowls. Quarter the prepared pie dough and roll each quarter into an 8-inch circle. Brush the outer edges of each bowl with the beaten egg yolk and cover each with one dough circle. Fold the dough over the sides with some pressure to make it stick and remove any extra dough. Brush the top of the dough with more egg wash and, with a knife, make 3 slits in the top. Sprinkle with salt and pepper. Arrange pies onto a baking sheet and bake for 1 hour or until the crust is golden brown. Allow the pies to cool for a few minutes before serving.
