4 Large Beets With Greens1 Large Bunch Swiss Chard3 Tablespoons Butter1 Large Shallot0.25 Teaspoon Salt & Freshly Ground Black Pepper2 Tablespoons White Wine0.5 Pound Bucheron Or Feta Cheese2 Tablespoons WaterPeel the beets and remove the greens. Chop the greens coarsely and set them aside. Slice the beets into 1/4-inch rounds. In a large bowl, toss chard with beet greens.In a large skillet over medium-high heat, melt butter and sauté shallots, beets, and salt & pepper for 2 minutes. Reduce the heat and cook for 15 minutes, until beets are tender. Add chard and greens mixture and cook for 5 minutes. Stir in wine, cover the skillet, and cook another 7 minutes. Arrange beet slices in four even stacks and top with mixed greens and a sprinkle of cheese.
