1 Large Head Cauliflower0.33 Cup Lemon & Honey Salad Dressing3 Tablespoons Extra Virgin Olive Oil0.25 Teaspoon Red Pepper Flakes1 Cup Quick Cooking Farro2 Cloves Garlic0.5 Teaspoon Fine-Grain Sea Salt15 Kalamata Olives0.25 Cup Oil-Packed Sun-Dried Tomatoes0.5 Cup Feta Cheese1 Tablespoon Fresh Lemon Juice0.5 Teaspoon Freshly Ground Black Pepper1 AvocadoPreheat oven to 425 degrees.In a bowl, combine cauliflower florets, 2 tablespoons olive oil, red pepper flakes and 1/4 teaspoon of sea salt and toss to coat well. Roast for about 25-30 minutes, flipping once.Meanwhile, add faro and 3 cups of water in a medium pan and bring to a boil. Reduce heat and simmer for about 15 minutes. Drain well and transfer to a bowl. Add 1 tablespoon of olive oil, 1/4 teaspoon of sea salt and garlic and toss to coat.In a large bowl, combine farro, roasted cauliflower, sun-dried tomatoes, olives, feta, lemon juice & toss to combine.Toss greens with the Lemon & Honey salad dressing till greens are coated. Combine the salad greens with the farro mixture. Toss to combine.On 4 serving plates, divide salad mixture evenly and top with avocado.
