2 Cups Strawberries4 Tablespoons Sugar1 Tablespoon Cointreau1 Pound Cream Cheese1 Teaspoon Vanilla Extract0 Icing SugarFor the macerated strawberries: in a bowl, mix together strawberries, Cointreau and 2 tablespoons of sweetener and keep aside for about 15 minutes. Chop half of macerated strawberries into smaller pieces. In a bowl, add cream, 2 tablespoons of sugar and 1 teaspoon of vanilla extract and mix till well combined. Add chopped strawberries and mix until just combined. Spread cream mixture over French toast, crepes or waffles. Top with remaining macerated strawberries evenly and sprinkle with icing sugar.
